  My family loves this place. Call ahead though to make sure they still have ribs that day. once they're gone they're gone. We just got turned away at 6 on a Tuesday.

  I disagree with Matt Uhlman. I work here, and the ribs are not made in a Crock-Pot! They are smoked in smokers early in the morning, and then they slow cook all day until we open at 4:30 p.m. If you don't like BBQ sauce, you don't have to have it because it isn't cooked on. We put the sauce on when they are served, and they are great either way. Matt obviously didn't ask the history of the building, because it is not a converted house. Bill's has been operated by Jaylene (Allen) Whipple's family for over 30 years, and they've been doing things the same this whole time. Everything is made from scratch except for the bread, Hy-Vee makes that. Before they owned Bill's, a very tall Black man named Bill (not sure of the spelling of the last name) Lightner owned it for at least 10 years. He was good friends with Jaylene's dad Jess. Bill used to frequent the Good Life, a local favorite bar where Jess worked at the time, where they connected because of their love of Jazz. Bill came to Jess one night and confided in Jess that he wanted to sell Bill's. Jess agreed to buy it that night, and his family took over soon after. Before Bill's was Bill's it had also been a donut shop, and a car shop, amongst other business's. The building has tons of history. I'm sorry if the location didn't suit you Matt, but Bill's suits our town. That's why it's still operating. Not many business's can say they've been around as long. Best Ribs in Iowa!
